Cauliflower ‘Rice’ Salad

Ingredients

For the salad:

  • 1 head of cauliflower – stem more or less removed
  • 2 apples – peeled, cored and roughly chopped
  • Juice of 1 lemon
  • 1 pomegranate
  • 1 red onion – diced
  • Handful of pistachios
  • Handful of pinenuts or crushed almonds
  • 1 handful flat leaf parsley – roughly chopped
  • 1 handful mint – roughly chopped

For the dressing:

  • Olive oil
  • Splash of apple cider vinegar
  • Juice of 1 lemon
  • 1 tbsp honey
  • Salt and pepper to taste

Method

  1. In a food processor, blast up the cauliflower florets to create a fine ‘rice’
  2. Roll the apple cubes in the lemon juice to avoid browning
  3. Mix up with all the remaining salad ingredients in a bowl
  4. Whisk up the dressing and mix it into the salad when you have the right balance of oil to acid – aim for two thirds oil to one third vinegar and lemon juice
