
Ingredients
For the salad:
- 1 head of cauliflower – stem more or less removed
- 2 apples – peeled, cored and roughly chopped
- Juice of 1 lemon
- 1 pomegranate
- 1 red onion – diced
- Handful of pistachios
- Handful of pinenuts or crushed almonds
- 1 handful flat leaf parsley – roughly chopped
- 1 handful mint – roughly chopped
For the dressing:
- Olive oil
- Splash of apple cider vinegar
- Juice of 1 lemon
- 1 tbsp honey
- Salt and pepper to taste

Method
- In a food processor, blast up the cauliflower florets to create a fine ‘rice’
- Roll the apple cubes in the lemon juice to avoid browning
- Mix up with all the remaining salad ingredients in a bowl
- Whisk up the dressing and mix it into the salad when you have the right balance of oil to acid – aim for two thirds oil to one third vinegar and lemon juice
