Roastmary Potatoes


  • Pile of potatoes – peeled and chopped
  • Generous dusting of flour
  • 1 tsp cumin
  • Pepper to taste
  • Handful of rosemary – finely chopped
  • Big glug of vegetable oil
  • Salt to taste


  1. Preheat the oven to 200 degrees
  2. Throw the potatoes into the oven tray with the flour, cumin, pepper and rosemary
  3. Toss the potatoes in the mix and keep adding more flour until it is no longer sticking to the potatoes but avoiding caking them too much
  4. Pour over the oil and toss them in it, creating a thin film over the surface – too much oil will make them soggy
  5. Put in the oven for roughly an hour, turning them once or twice and taking them out when they look golden and crunchy
  6. Season to taste
