
Ingredients
For the sauce:
- 2 servings of penne pasta
- Olive oil
- 2 courgettes
- 5 cloves garlic – finely diced
- 1 tsp dried italian herbs
- Small handful of roughly chopped thyme
- Small handful of parmesan – grated
- Salt and pepper to taste

Method
- Bring a pot of salted water to the boil and cook the penne according to packet instructions
- Use a peeler to ribbon the courgettes lengthwise
- Bring an unhealthy amount of olive oil to a medium heat and throw in the garlic, frying it for a couple of minutes
- Throw in the courgette and dried herbs and fry for 3 minutes or until the courgette is softened
- Drop in the penne, season and then remove from the heat before stirring in the parmesan and thyme
- Serve with parmesan, herbs and tired cliches like ‘just like nonna used to make’
