For the sauce:

  • 2 servings of penne pasta
  • Olive oil
  • 2 courgettes
  • 5 cloves garlic – finely diced
  • 1 tsp dried italian herbs
  • Small handful of roughly chopped thyme
  • Small handful of parmesan – grated
  • Salt and pepper to taste


  1. Bring a pot of salted water to the boil and cook the penne according to packet instructions
  2. Use a peeler to ribbon the courgettes lengthwise
  3. Bring an unhealthy amount of olive oil to a medium heat and throw in the garlic, frying it for a couple of minutes
  4. Throw in the courgette and dried herbs and fry for 3 minutes or until the courgette is softened
  5. Drop in the penne, season and then remove from the heat before stirring in the parmesan and thyme
  6. Serve with parmesan, herbs and tired cliches like ‘just like nonna used to make’
