Millennials on Toast

Ingredients

For the top:

  • Flesh of 3 avocados
  • 1/2 cup yoghurt
  • 1 red chilli
  • 1 tsp chilli flakes
  • Handful of mint
  • 1/2 handful of thyme
  • 3 cloves garlic
  • Juice of 1 lemon
  • Splash of olive oil
  • Salt and pepper to taste

For the bottom:

  • 1 loaf ciabatta or sufficiently bougie equivalent
  • Drizzle of olive oil

Method

  1. Drop all of he topping ingredients except for one avocado into a food processor and blast it together until smooth. Stir through the extra avocado to give it a chunky vibe
  2. Get a frying pan screaming hot
  3. Cut the ciabatta into two, drizzle with olive oil and place face down in the pan
  4. Cook until golden brown
  5. Serve large dollops of the avocado mix on the bread and top with lemon juice and extra chilli flakes
  6. Take photos and tag @vaguelyvegetarian on Instagram
  7. Bask in social media glory
