
Ingredients
- 1 onion – diced
- 1 tbsp minced garlic
- 1 tbsp minced ginger
- 1 green chilli – diced
- 1 red chilli – diced
- Heaped tsp chilli powder
- Heaped tsp cumin
- Heaped tsp turmeric
- Heaped tsp garam masala
- 1 can tomatoes
- 1 big bag of spinach – roughly chopped
- 1 handful of coriander – roughly chopped
- 1/2 cup coconut cream or natural yoghurt
- Salt and pepper to taste

Method
- Sautee the onions over a high heat
- Add in the garlic, ginger, chillis, chilli powder, cumin, turmeric, garam masala and combine together
- Add the tomatoes, spinach, coriander and coconut cream and simmer until the spinach has wilted down, adding a bit of water if it becomes too thick
- If you have a stick blender you might like to whizz it up a bit to get the consistency smoother
- Season to taste and serve over brown rice with raita dip
