Spinach and Tomato Curry


  • 1 onion – diced
  • 1 tbsp minced garlic
  • 1 tbsp minced ginger
  • 1 green chilli – diced
  • 1 red chilli – diced
  • Heaped tsp chilli powder
  • Heaped tsp cumin
  • Heaped tsp turmeric
  • Heaped tsp garam masala
  • 1 can tomatoes
  • 1 big bag of spinach – roughly chopped
  • 1 handful of coriander – roughly chopped
  • 1/2 cup coconut cream or natural yoghurt
  • Salt and pepper to taste


  1. Sautee the onions over a high heat
  2. Add in the garlic, ginger, chillis, chilli powder, cumin, turmeric, garam masala and combine together
  3. Add the tomatoes, spinach, coriander and coconut cream and simmer until the spinach has wilted down, adding a bit of water if it becomes too thick
  4. If you have a stick blender you might like to whizz it up a bit to get the consistency smoother
  5. Season to taste and serve over brown rice with raita dip
