
Ingredients
For the bottom:
- 3 rhubarb sticks – chopped
- 1 large apple – peeled, deseeded and chopped
- Dash of vanilla essence
- Juice of a lime or lemon
- 2 spoonfuls of honey
- 1 tsp cinnamon
- Water as needed
For the top:
- 2 big knobs butter
- 1/4 cup sugar
- 1 cup flour

Method
- Preheat oven to 200 degrees celsius
- Mix all the base ingredients together in a saucepan and bring to a simmer – use just enough water to stop it sticking to the bottom
- Simmer for approximately 10 minutes or until the fruit is softened
- Meanwhile rub together the butter, flour and sugar – slowly adding more flour until it stops holding together in a ball and starts to form loose crumbs
- Pour the fruit mixture into an oven dish and then sprinkle the crumble mix over the top – avoid the urge to press it down as the more surface area the crumble mixture has the more it will crispen
- Put in the oven for 30 minutes or until the top is golden brown
