Apple and Rhubarb Crumble


For the bottom:

  • 3 rhubarb sticks – chopped
  • 1 large apple – peeled, deseeded and chopped
  • Dash of vanilla essence
  • Juice of a lime or lemon
  • 2 spoonfuls of honey
  • 1 tsp cinnamon
  • Water as needed

For the top:

  • 2 big knobs butter
  • 1/4 cup sugar
  • 1 cup flour


  1. Preheat oven to 200 degrees celsius
  2. Mix all the base ingredients together in a saucepan and bring to a simmer – use just enough water to stop it sticking to the bottom
  3. Simmer for approximately 10 minutes or until the fruit is softened
  4. Meanwhile rub together the butter, flour and sugar – slowly adding more flour until it stops holding together in a ball and starts to form loose crumbs
  5. Pour the fruit mixture into an oven dish and then sprinkle the crumble mix over the top – avoid the urge to press it down as the more surface area the crumble mixture has the more it will crispen
  6. Put in the oven for 30 minutes or until the top is golden brown
