Focaccia Bread


For the dough:

  • 500 g flour
  • A knob of butter or margarine
  • 1 tsp salt
  • 1 activated yeast sachet
  • 300 ml warm water
  • Extra flour for kneading

For the top:

  • 1 tsp rosemary – chopped
  • 1 tsp dried thyme
  • 1 tsp salt
  • Pepper to taste
  • Glug of olive oil


  1. Preheat oven to 200 degrees celsius
  2. In a bowl, rub together the salt, flour and butter
  3. Mix in the yeast
  4. Stir through the water until it forms a thick dough
  5. Tip onto a floured surface and knead for 10 minutes
  6. Spread it into a roundish flat shape and leave to rise with a damp cloth over it for two hours
  7. Mix together the ingredients for the top and brush over the top
  8. Bake at 200 degrees celsius for 30 minutes or until the top is golden brown
