Spicy Stirfry

Ingredients

  • 1 red onion – diced
  • 1/2 head of broccoli – chopped
  • 1 red pepper – chopped
  • 1 carrot – chopped
  • 2-3 spring onions – diced
  • 1 chilli pepper – finely diced
  • Handful of mushrooms – sliced
  • 1 Tsp minced garlic
  • 1 Tsp minced ginger
  • 1 Tsp sichuan peppercorns – crushed
  • 1 Tbsp soy sauce
  • 1 Tbsp sweet chilli sauce
  • 1 Tbsp peanut butter
  • Juice of half a lemon
  • 1 handful of peanuts – roughly crushed up
  • 1 handful of coriander – roughly chopped
  • 1 packet medium noodles
  • Salt and pepper to taste
  • Lemon wedges, coriander and peanuts to serve

Method

  1. Sautee the onion in a small amount of oil in a wok over high heat until starting to brown
  2. Drop in the broccoli, pepper, spring onions, chilli pepper and mushrooms and cook for 5 minutes, stirring constantly
  3. Drop in all the remaining ingredients and bring up to heat
  4. Check the veges are cooked through but still crunchy
  5. Serve with a lemon wedge, sprinkling of coriander and extra peanuts
