
A tasty and budget friendly option. Perfect for using up leftover ingredients in the fridge.

Ingredients
- 1 onion – diced
- 2 potatoes – chopped into chunks
- 1/2 head of cauliflower – cut into florets
- 1 tsp minced garlic
- 4 Eggs – beaten
- 1 handful of spinach
- 1 handful parsley – roughly chopped
- Salt and pepper to taste
- 2 handfuls of cheddar cheese – grated
Method
- Preheat oven to 200 degrees celsius
- Lay out the onion, cauliflower and potato on a baking tray and roast for 20 minutes
- Remove from oven and combine in a bowl with the remaining ingredients, reserving one handful of the cheese for the top
- Pour into an oven proof dish and bake for approximately 15 minutes
- Return to the oven for 10-15 minutes or until the cheese is golden
