Potato and cauliflower frittata

A tasty and budget friendly option. Perfect for using up leftover ingredients in the fridge.


  • 1 onion – diced
  • 2 potatoes – chopped into chunks
  • 1/2 head of cauliflower – cut into florets
  • 1 tsp minced garlic
  • 4 Eggs – beaten
  • 1 handful of spinach
  • 1 handful parsley – roughly chopped
  • Salt and pepper to taste
  • 2 handfuls of cheddar cheese – grated


  1. Preheat oven to 200 degrees celsius
  2. Lay out the onion, cauliflower and potato on a baking tray and roast for 20 minutes
  3. Remove from oven and combine in a bowl with the remaining ingredients, reserving one handful of the cheese for the top
  4. Pour into an oven proof dish and bake for approximately 15 minutes
  5. Return to the oven for 10-15 minutes or until the cheese is golden
